Green dining is often associated with farm-to-tables in idyllic countryside locations. While less commonly associated with big cities, urban centers are hubs for creativity and innovation, as Alicia Erickson finds out on a food hop across London’s pioneering bars and restaurants.
On a spring afternoon, I sat at a wooden table inside e5 Bakehouse, watching grain being ground in a mill just a few feet from behind glass walls. Behind the scenes, bakers were using the fresh-milled flour to make sourdough loaves. My lunch—grilled eggplant and zucchini over hummus and topped with sprigs of dill and thick-cut sourdough—was created from ingredients sourced nearby. It was a simple reminder: Food doesn’t begin in the kitchen. It begins in the land and the systems that shape what we grow and how it reaches our plates.
The restaurant industry has long been associated with excess—discarded food, single-use plastics, and global supply chains. In the UK alone, the hospitality sector generates nearly one million tons of food waste each year. Meanwhile, food systems account for close to one third of global greenhouse emissions, and soil health continues to decline under intensive farming practices. But food doesn’t have to be part of the problem. Increasingly, how and what we eat is changing. Restaurants and cafés are becoming spaces for creativity, innovation, and reconnection to seasons and places.
Conscious dining, which centers locally and responsibly grown and sourced products, is often associated with farm-to-fork restaurants away from city life. So how does that philosophy translate to a dense global hub? London may be one of the world’s largest cities, but it’s also one of its greenest. Nearly half its acreage is parks, woodlands, marshes and waterways, and these landscapes are inspiring chefs, bakers and restaurateurs to rethink how the city eats and drinks.
During recent visits to the city where I once completed my Master’s—and have often returned to—I began exploring the question: Can conscious dining really thrive here? And if so, what shape does it take?
Last spring, I wandered over to Flat Earth Pizza, a neighborhood favorite for vegetarian and vegan pizzas. The Bethnal Green restaurant in east London—a bright, minimalist space with chalk signs and a wall of natural wines—was just picking up for the evening.
Pizza may be one of the world’s most globalized foods, but here, the ingredients tell a more local story. Over a seasonal broccolini and ricotta pizza and the KFM—Flat Earth’s signature Korean-inspired pizza topped with oyster mushrooms, piquillo peppers and gochujang—I spoke with owners Rich Baker and Sarah Brading about foraging, the challenges of running independent restaurants in an expensive city, and whether pizza be built around local agriculture rather than global supply chains and greasy meats.

Creativity, hard work, and collaborating with community organizations is at the heart of it. The pizza menu is shaped by seasonal goods, and the wine list represents female producers. Vegetables are sourced from nearby regenerative farms, including growers at North London’s Forty Hall Organic Farm and Hackney’s Growing Communities. Surplus produce is fermented or pickled to extend its longevity.
And rather than importing the flour from Italy, dough is made from organic, heritage grain flour sourced from the UK. “It’s so difficult for many people to understand where ingredients come from,” said Rich. [Since time of research, Flat Earth has announced it is closing, its last day Wednesday 22 April 2026]
Speaking of localizing flour, just a short walk away across London’s Regent’s Canal, is e5 Bakehouse, a London Fields institution that mills its own grain. e5 sources heritage wheat varieties from small British farms–including its own space, Fellows Farm in Suffolk—and mills the flour on site. Heritage wheats, grown before industrial hybridization became widespread in the mid-20th century, are often more flavorful and nutrient-dense. “Once you start milling flour yourself, you realize bread doesn’t begin in the bakery. It begins in the soil,” said Ben MacKinnon, e5’s founder.
Beyond e5’s legendary sourdough, the rotating lunch menu at each of its three locations—Hackney, Poplar, and V&A East Storehouse—centers seasonal, locally sourced produce. A small selection of fruits and vegetables, as well as local cheeses, are for sale, so customers can bring local products home.
Elsewhere in east London, chefs are bringing the growing process closer to the plate. At Brunswick East, a café and bakery run by sisters Shaunae England and Natasha Bacon, vegetables, greens, and herbs are harvested from a rooftop garden above the kitchen. On a gray winter’s afternoon, rows of pots and flower trees sprouting yuzu, bergamot, and radicchio rosa lined a greenhouse overlooking Dalston. When warmer weather arrives, so do tomatoes, chilis, cucumbers, and lesser-known herbs, including lemon verbena and blackcurrant sage.
Brunswick’s Sky Farm is home to 60 vegetable planters, 30 fruit trees, and a greenhouse, growing mostly heirloom and commercially extinct varieties. Nearly every part of the plant is used—leaves to flowers to young seed pods—inspiring the pastries, house-concocted beverages, and seasonal plates, like homemade yoghurt infused with elderflower, roasted beet salad sandwiches, and rhubarb bellinis.
“The Sky Farm connects us to the whole growing cycle of our produce,” said Bacon. “For me, it’s symbolic of what can happen when you start to look at space differently. Our Sky Farm started with the conversion of a commercial bin shed in the courtyard. A dead space, reimagined.” Brunswick’s earth-friendly philosophy extends beyond menu-sourcing: Making their own cheese and yoghurt, using natural cleaning products, and reducing waste by eliminating cling film and using biodegradable baking paper.
On March 8th last year, I stopped by Luminary Bakery in Stoke Newington, north London, for a weekend tea after a hand-drawn ‘Happy International Women’s Day’ sign and a window filled with cakes topped with seasonal flowers caught my attention. I found out the bakery was established to help disadvantaged women. “Luminary supports women who are often furthest from the job market,” explained managing director Claire Holton. “Many have experienced domestic abuse, homelessness, incarceration, or sexual exploitation.”
Luminary offers baking training, employability skills, mentoring, and emotional support, with participants gaining experience in a commercial bakery before moving into apprenticeships or hospitality jobs across London. “It’s about rebuilding confidence, community, and independence,” said Holton. “Baking is simply the vehicle we use to help women rediscover their strengths and step back into the world of work.”
Conscious dining in London extends beyond green policies, and into socially impactful models as well. Across the city, initiatives like Social Bite and Change Please are using food and coffee as vehicles to support people experiencing homelessness through cafés and coffee carts.
These pioneering ideas aren’t confined to bakeries and neighborhood cafés. In recent years, London’s fine dining scene has also begun embracing zero waste, regenerative sourcing, and plant-forward cooking.
Later that week, I grabbed a cup of turmeric chai at Trampoline Café and sat down with Dale Bentley, the initiative’s Head of Operations. Tucked into the Royal College of Nursing off Cavendish Square, it’s an innovative space selling teas, coffees, and curries. The bright yellow accents on the walls tell stories of its background: To support refugees and asylum seekers. Having worked with asylum seekers in the UK and refugees across East Africa and South Asia, this mission hit close to home.
Many refugees arrive in the UK with a strong skillset yet face barriers to finding work. Trampoline Café’s founder Pranav Chopra sought to change this; first, by starting an initiative for refugees to sell chai at London markets, which evolved into social enterprise NEMI teas, and eventually the launch of Trampoline in 2022.
“Trampoline Café exists to empower refugees to find meaningful employment through hospitality training programs and paid work experience,” said Bentley. “We aim to overcome these challenges by upskilling in readiness for employment, improving overall confidence, and building a strong sense of community inclusion.”
These pioneering ideas aren’t confined to bakeries and neighborhood cafés. In recent years, London’s fine dining scene has also begun embracing zero waste, regenerative sourcing, and plant-forward cooking. One of the earliest pioneers was Silo, the Hackney Wick restaurant known for its zero-waste philosophy. The restaurant was largely considered to be the first zero-waste restaurant in the world, a concept that involves adopting dozens of practices from eliminating plastic to sourcing of producing to upsourcing waste. Although Silo closed its doors in late 2025, there are plans to host a series of traveling pop-up dinners that continue to share its zero waste policies.
In Mayfair, Michelin Green Star restaurant Apricity, led by chef Chantelle Nicholson, builds its menus around responsibly sourced and foraged British ingredients and a circular kitchen philosophy. To complement its existing system, the Michelin Guide implemented the green star system in 2020 to recognize restaurants leading the industry in ethical and environmental standards.
At Apricity, foraged ingredients—from wild herbs to coastal greens to magnolias—shapes both its à la carte and tasting menus with dishes such as smoked carrot tart over black barley and Chalk Stream trout drizzled in basil and lime sauce.
Across town in Old street Shoreditch, Plates takes another approach. Chef and cofounder Kirk Haworth’s plant-based tasting menu—inspired by his own health journey— explores what sustainable fine dining can look like through a vegan lens: “The future involves cleaner soil health and more purposeful plates of food,” commented Haworth.
Haworth highlights seasonal British produce in dishes that prioritize both flavor and environmental impact, including barbequed Maitake mushrooms over a black bean mole and Cornish potatoes paired with toasted hazelnut and apricot. In 2025, Plates became the first vegan restaurant in the UK to be awarded a Michelin star.
Despite the momentum behind these ideas, running an environmentally or socially driven restaurant in London is far from easy, with high costs, small spaces, and steep competition among the greatest challenges facing independent restaurateurs. The Natural Philosopher, a Hackney cocktail bar centering foraged ingredients in rotating libations, recently closed, partly due to rising costs, making sustaining an independent establishment challenging.
“Cities tend to reward convenience and scale, while local and seasonal food systems are often smaller, slower and sometimes unpredictable,” said e5’s MacKinnon. Brunswick East’s owners mirror this sentiment. “None of these systems operate on the scale of London’s massive food supply chains,” said Bacon. “But taken together, they represent something quietly radical: A group of kitchens attempting to shorten the distance between soil and city plate.”
And many culinary professionals say that cities like London are uniquely suited to these experiments, where creativity and community run high. Dense neighborhoods allow restaurants to build close relationships with growers, bakers, and customers. And diners, increasingly curious about the origins of their food, are willing to support businesses that align with those values. Across the city, I’d experienced versions of the same idea in rooftop gardens and neighborhood bakeries, all rethinking how ingredients are sourced and used. Pop-up supper clubs for Palestine, bread baked by refugees at farmer’s markets, and community gardens running permaculture workshops. London’s creative spirit is the perfect foundation for these types of projects to take root.
Conscious dining in London doesn’t look like a dinner in the lush countryside. It exists behind the scenes and in smaller, improvised spaces. The concept is continually evolving, but the idea that food is more than something to consume—that it carries impact and connection—is woven into the story of each space. Everywhere I look, more of these stories are taking root.
